It felt like a soup kind of night. Decided to put a twist on my homemade vegetable beef soup. I didn’t have potatoes so instead I used a package of Oriental Ramen noodles. Viola! Oriental Noodle Vegetable Beef Soup.
INGREDIENTS:
2 tablespoons olive oil
1 cup onion, chopped
1 cup celery, chopped
1 pound ground beef
1 cup frozen carrots
1 cup frozen peas
1 package of Oriental Ramen Noodles
1 cup chopped canned tomatoes
3 cups vegetable or beef stock
DIRECTIONS:
Heat oil in large heavy pot. Add onion and celery and cook until tender. Add ground beef and cook until browned.
Add frozen carrots, peas, chopped tomatoes, stock and Oriental seasoning packet and bring to a boil. Then add noodles and cook according to package. Serve hot.
