3 tbsp extra virgin olive oil
1 tsp minced garlic
1 tbsp blueberry jam
salt and pepper
BBQ sauce
1/2 tsp cayenne
1 Pork Tenderloin (about 1 1/2 Pounds)
2 tbsp vegetable oil
Combine blueberry jam, cayenne with 2 tbsp of BBQ sauce in small bowl to create the sauce that will be brushed over top the pork loin.
Season pork tenderloin with salt and pepper
Add vegetable oil to a skillet over high heat. Oil is hot enough once it starts to ripple. Add pork tenderloin and sear for 1 to 2 minutes per side.
Place tenderloin crockpot. Cover; cook on High for 3 hours and 30 minutes or on Low for 5 hours, or until pork tenderloin is cooked through.
Once done cooking, place pork on a serving platter and let sit (covered) for 10 minutes before cutting.
Slice and serve.
